Listed below is a small selection of beef pre-cuisine items that we can supply:
Premium Cut Larded Topside Joint > Joint of topside, larded and tied using French methods, totally devoid of all waste. Full flavoured, easy to carve, easy to present product.
Fillet of Beef Centre Cut > Centre log completely larder trimmed. Ideal for cooking whole, then portioning or cutting your own tournedo steaks.
Rump Fillet Barrel > A single muscle taken from the chateaubriand end of the fillet, seam butchered and wrapped in cling film. Average weights 340-396g (12-14oz)
Sirloin Beef Medallions > 57-85g (2-3oz) - Very tender, sirloin beef medallions, larded and tied. Lower price alternative to fillet beef medallions.
Single Muscle Hindquarter Steak > 170g (6oz) - Taken from the leg and marinated in olive oil and fresh thyme.
Italian Minute Steak > 113g (4oz) - Slice of single muscle rump steak, devoid of all fat and gristle, then lightly battened. Ideal for serving in a sauce, and it also makes great steak sandwiches.
Beef Olives > 71g (2˝oz) - Filled with minced beef and Austrian seasoning, or beef and horseradish, or Dijon mustard with crushed black pepper.
Beef Kebabs > 113g (4oz) - Lean cubes of beef with green peppers. Threaded onto a wooden skewer.
Stroganoff Stir Fry > Tender, lean strips of sirloin (julienne). Also available marinated in pure vegetable oil and flavoured crushed peppercorns.
Beef Satays > Great canapé idea. Like a ribbon of been woven on to the skewer.
Rump Lollipops > As the name suggests, a stick with a single nibble of rump on the end.
