Entente cordiale. Aubrey Allen welcomes Eric Nieulat - 17th November 2010

Aubrey Allen has been delighted to extend the warmest of welcomes to Parisian butcher, Eric Nieulat. Working with Bob Spring in our state-of-the-art butchery unit all this week, Monsieur Nieulat and Bob have been exchanging both traditional and contemporary ideas on meat cuts whilst working together on the international butchery website www.universboucherie.com. The website will provide great information for educating chefs and butchers alike as well as being an inspiration to encourage young people into the trade.

Aubrey Allen was recommended to Eric by Le Rosbif Club and introductions were made in the Summer of 2010. Our conversations and subsequent meetings have been incredibly interesting and valuable to both parties. We look forward very much to continuing our work together as we share information and resources to create a truly international team of butchers, chefs and farmers.
