Listed below is a small selection of lamb pre-cuisine items that we can supply:
Rustic Shoulder of Lamb > A whole shoulder that has been cut into either 4 or 6 portions.
Cushion of Lamb > The prime part of the leg, seam butchered out. Serve whole or fan out.
Centre Shoulder Slice > 340g (12oz) – Rustic cut from the shoulder with a small bone in.
Lamb Leg Steak > 227g (8oz) or 284g (10oz) - Uniform size, full leg lamb steak, available bone in or boneless. This product is available plain or with one of our marinades.
Loin Noisettes > This product may be prepared as a whole roll approximately 1 kilo, or cut into individual noisettes to specific size. It is available plain, with one of our fillings or topped with one of our range of mousselines and encased in caul.
Stuffed Blade of Lamb > Prepared from the shoulder, this compact roasting joint is fantastic. Approximately 1.5kilos, this will serve 8 portions with little or no waste. This product is available with one of our fillings.
Stuffed Leg or Shoulder of Lamb > Prepared carvery style or boneless and trimmed of all excess fat, with an average weight of 3.6kg (8lb) for leg and 2.3kg (5lb) for shoulder. This product is available with one of our fillings.
Stuffed Lamb Saddle > Long or short saddles available. Skinned inside and out, boned and trimmed. Available with a choice of mousselines or fillings.
Lamb Stir Fry > Tender strips of lean lamb, with a marinade of your choice.
Lamb Kebabs > 113g (4oz) - Tender cubes of lamb threaded onto a wooden skewer. Available with a marinade of your choice.
