Listed below is a small selection of speciality lamb cuts that we can supply:
Canon of Lamb > Simply the totally cleaned eye of the loin with the silverskin removed.
Canon of Lamb (Fat On) > 6oz portion of pure eye muscle with a small covering of fat.
Racks of Lamb > Available in all sizes from 8 rib downwards, French or larder trimmed.
French Trimmed One Rib Rack of Lamb > 198-227g (7-8oz) - There is just one rib left in for presentation and everything else is cleaned off.
Lamb Chump > 198g (7oz) - From the bottom of the leg, this product has become a real favourite.
Leg Lamb Noisette > Approximately 340-397g (12-14oz) in weight. Completely trimmed and tied. Presents a lovely roasting joint to be cut into noisettes after roasting. Serves two people. As an alternative, try confiting.
Pave of Lamb > 170-198g (6-7oz) - An all lean single muscle taken from the leg, completely cleaned of all fat and gristle. Serve whole or fan out.
Lamb Shank Kleftico (Leg) > A classical lamb shank ideal for braising.
Shoulder Kleftico > Cut from the forequarter of lamb and completely trimmed. This is a rustic piece of meat for braising. Slightly sweeter than the leg shank.
Lamb Mini-Rack French Trimmed > This is the bassecôte rack. This is fantastic to do a roast secondary rack, or it makes a fantastic Irish stew.
Shoulder Lamb Noisette Roll > Approximately 20-24oz. This is the prime block of shoulder of lamb, with all the internal gristle and sinew taken out. It is then rolled into a noisette shape. Great for twice-cooking i.e. braising then leaving in the stock overnight before portioning and returning temperature and caramelising in butter.
Extra Trimmed Should Lamb Roasting Joint > Weighs approximately 3lb. It is fully larder trimmed and it makes a great alternative to having a big joints whilst keeping the succulence of the shoulder.
Lamb and Coriander Burger > Minced Cornish lamb with a light seasoning which includes fresh coriander and other Greek herbs.
