Listed below is a small selection of pork pre-cuisine items that we can supply:
Loin and Leg of Pork > Prepared carvery or boneless. This can be filled with a selection of our stuffings.
Carvery Pork Roast > Prepared from the shoulder, with all the bone and excess fat removed. The joint can then be filled with a selection of our stuffings. The two most popular for this joint are pork and apple and pork and paprika.
Pork Loin Eye Medallions > 85g (3oz) - The eye of the loin of pork, with the rind and silverskin removed. Available plain or topped with a choice of mousselines and wrapped in crepinette.
Pork Paupiette > 142-170g (5-6oz) - Essentially a pork parcel filled with a choice of our stuffings. Fantastic if braised off.
Pork Schnitzel > 113g (4oz) - Large thin slice of pork, seasoned with a very fine crumb from Austria.
Pork Loin Noisette > 170-227g (6-8oz) - Prepared from the loin, with the rind removed and a pocket cut in the centre, and then filled with a selection of our stuffings.
Marinated Pork Loin Steak > 170g (6oz) - Just the rindless eye muscle of the loin of pork, prepared as a single loin steak or butterflied open to give a heart shape. Available plain or marinated.
Pork Fillet > ‘Saltimbocca’ - Pork tenderloin, marinated in Virgin olive oil with sage, and wrapped in Parma Ham. Single portion 180g min weight.
Pork Satays > Ribbons of pork woven onto a skewer.
Pork Lollipops – Just a nibble of pork fillet rimmed in sweet paprika on the top of a skewer.
Pork Spare Rib Chop > 170g (6oz) - Prepared from the shoulder of pork, with no rind, as a chop or as a boneless steak. Available plain or marinated.
Pork Fillet Kebabs > 113g (4oz) - Lean pork tenderloin, completely trimmed of all fat, sinew and silverskin. Sliced widthwards, four rings of pork tenderloin are rimmed in sweet paprika and threaded onto a skewer.
Pork Collar Steaks > 113g (4oz) – Just the boneless, rindless eye muscle.
