All of our sausages are hand made using natural ingredients and natural herbs and spices, not spice extracts or flavourings, which are in more commonly-produced sausages.
Advance notice and a minimum quantity is required for some varieties.
Traditional Breakfast Pork - A pork sausage made in the traditional way using lean pork, bread, salt, spices and preserve. Slightly peppered and delicious.
Traditional Beef - This is traditionally made using Scotch beef.
Olde English Sausage - Made to a fifty year old recipe with rubbed sage and thyme - ideal for breakfast.
Pork and Chive - A thick, coarse cut country style pork sausage made to an old recipe and seasoned with chives.
Cotswold - A thick, coarse cut country style pork sausage made to an old recipe and seasoned with sage.
Cumberland - Award winning sausage. This thick cut, coarse and slightly peppery sausage is presented in a traditional link.
Pork and Apple - Made with coarse cut pork, herbs and apple. A subtle sweetness and is very juicy.
Pork, Garlic and Herb - Fresh ground pork, with crushed herbs and garlic.
Barbecue Sausage - Coarse cut sausage with herbs, spices and garlic.
Merguez - A great favourite in the South of France - a hot and spicy small lamb sausage.
Italian - Pork, rosemary, garlic and oregano.
Lamb and Mint - A traditional combination of Cornish lamb and fresh mint.
Pork, Ginger and Spring Onion - Twice "Gold Medal" winner - a truly stunning combination.
Rustic Provencale - A coarse cut pork sausage with red wine, garlic, olive oil, thyme and parsley. Wonderfully flavoursome! (Advance notice required)
Warwickshire Whizzer - This is very spicy with lots of flavour. Coarse cut pork, with mustard, sage, coriander, paprika and a little bit of chilli.
Beef and Horseradish - Beef and chopped horseradish, this really has a unique flavour.
Venison, Red Wine and Smoky Bacon – Only our best venison goes into this sausage, which we flavour with smoked bacon and red wine. This is marinated over night, prior to being filled.
Pork and Leek – Traditional pork sausage with fresh leeks.
