Giel Spiering and his parents moved over from Holland in 1998 and bought a dairy farm near Looe, Cornwall where they happily farmed for 8 years. Giel returned home from school around that time to see a For Sale sign outside the family home, which he learned was due to the continuous falls in milk prices.
Giel and his family had fallen in love with Cornwall and Giel was insistent that they would not be leaving and should diversify into cheese making. Knowing from their Dutch roots that there was a gap in the market for a British Gouda they began making Cornish Gouda from the milk of the Spiering family 100 strong Holstein Fresians.
Fast forward 5 years and the farm and cheese making business is thriving with the farm and cheese room running on sustainable energy as well as a string of cheese awards. Giel is also one of the youngest cheese makers in the country.
Here at Aubrey Allen we are extremely proud to stock Giels 10-12month Gouda Mature that is made with Traditional Rennet and Pasteurised Milk. It has a wonderful creamy texture with the crunch of salt crystals and wonderfully long caramel notes.
